12 Eggs - beaten
1/2 Lb. Loose Sausage [1/4 Hot, 1/4 Regular] Browned & Drained
1/2 C Chopped Onion
1/2 C Chopped Pepper
1/2 Shredded Cheddar
1/2 t. Salt
1/2 t. Pepper
Garlic Powder Optional

Directions:

Mix all ingredients.
Put 1/3 C mixture into greased muffin tins
Bake at 350 degrees 20-30 minutes or until knife comes out clean.

These cups can be made the night before and baked in the morning. Leftovers can be heated in the microwave.
Also, this can be poured into a baking dish and baked until set and the knife comes out clean.
