1 cup vegetable oil
1 cup sugar
1 tsp. vanilla extract
3 1/2 cups flour
1 tsp. baking powder
1 tsp. salt
12 oz. pkg. semi-sweet chocolate chips
8 oz. almond toffee bits

Directions:
Directions:
In a large mixing bowl, place eggs, oil, sugar and vanilla. Using an electric mixer, beat until light in color; about 5 minutes. In another bowl, mix flour, baking powder and salt; mix well. Add into the egg/sugar mixture and stir until just incorporated; do not overmix. Stir in the chocolate chips and toffee chips. Wrap dough in plastic wrap and refrigerate 3 hours. Divide dough into 4 pieces; shape each piece into 8x3-inch logs and place onto parchment-lined cookie sheets. Bake in a preheated 350º oven for 30 minutes or until lightly browned. Reduce oven to 300º and remove cookie logs from the baking sheet; cut diagonally into 3/4-inch slices. Place cookies back on the cookie sheets and bake until golden brown, about 20 minutes.

Mom found this recipe in the Chicago Tribune Food Section. It won 2nd place in their annual cookie contest. She was always trying out new biscotti recipes, since Dad loved to dunk them in his morning coffee!
