6 cups spring salad mix or romaine or endive lettuce
2 chicken breasts, broiled and chopped
2 medium tomatoes, diced or cherry tomatoes, halved
1 medium avocado, peeled and sliced
3 eggs, hard boiled
1/2 cup blue cheese
6 bacon strips, cooked and crumbled
1 green onion, chopped


Dressing:
1/2 cup red wine vinegar
1 tsp. lemon juice
3/4 tsp. Worcestershire sauce
1 garlic clove, chopped
2 tsp. salt
1/2 tsp. ground mustard
1/4 tsp. sugar
3/4 cup vegetable oil
1/4 cup olive oil

Use a large rectangular serving platter. Spread lettuce to cover the platter. Place each of the salad ingredients in a column down the length of the platter. There should be a column of chicken, tomatoes, avocados, eggs, blue cheese and bacon. Top with chopped green onions. Cover and refrigerate until ready to serve. Dressing: Blend all the ingredients together. When ready to serve, pour the dressing on the salad.

This is a beautiful salad that gets raves from everyone. It is excellent for a brunch, lunch or even dinner. I have switched out the salad ingredients for vegetarian guests. Other favorites include mushrooms, marinated artichoke hearts, grilled asparagus and roasted red peppers. Served with bread it makes a great main dish meal.
