1 c all-purpose flour
1/2 c butter, softened
1/4 c powdered sugar
1 c granulated sugar
2 tsp grated lemon peel
1/2 tsp baking powder
1/4 tsp salt
2 large eggs

Directions:
1. Preheat oven to 350ºF
2. In medium bowl mix flour, butter and 1/4 cup powdered sugar. Press into ungreased 8 or 9 inch square pan building edges up 1/2 inch. Bake crust for 20 minutes.
3. In medium bowl beat remaining ingredients with electric mixer on high speed for 3 minutes until light and fluffy. Pour over hot crust.
4. Bake 25 to 30 minutes until no indentation remains when lightly touched in center. Cool completely in pan on wire rack. Can dust with powdered sugar or make a glaze with powdered sugar for the top of the bars. Cut into 5 rows by 5 rows, after glaze is completely set if using.
