6 green onions, chopped
1 medium onion, chopped
2 tablespoons olive oil
2 red bell peppers, chopped
1/2 large head of cabbage, roughly chopped
2 cans (16 oz each) diced tomatoes
3 carrots, sliced
1 bunch celery, sliced
Sriracha sauce
1 envelope (1 oz) Lipton Onion Soup Mix
2 cans green beans, undrained
salt and pepper
4 cups vegetable broth
20 oz V-8 Juice
20 oz water

Directions:
Directions:
Slice green onions, put in a pot with chopped onion on medium heat and start to sauté with olive oil. Do this until the onions are whiter/clearer in color (about 4-6 minutes. Add chopped red pepper, cabbage, carrots and celery.
Add tomatoes. If you would like a spicy soup, add hot sauce or cayenne pepper now.
Add onion soup mix and green beans (undrained). Add vegetable broth, V-8 and water; cover and heat on low. Let soup simmer for about 2 hours or until vegetables are tender.

Fantastic soup if you're trying to lose a few lbs. We add a lot of Sriracha sauce to make it extra spicy. It makes a large batch.
