1-2 TBS Olive Oil
1 medium onion diced
1 tsp. minced fresh garlic
1 medium zucchini, sliced
1 medium squash, sliced
1 medium tomato, sliced
1 onion, sliced
1-2 tsp dried thyme
salt and pepper to taste
1 1/2 cups shredded parmesan or Italian blend cheese

Directions:
Directions:
Preheat oven to 400º.
Saute' diced onion and garlic in a skillet for about 5 minutes. While they are sauteing, thinly slice the rest of the vegetables. Spray and 8x8 square dish or round baking dish with cooking spray.
Spread cooked onion and garlic in the bottom of the dish. Place the vegetables int he baking dish vertically, in an alternating pattern. Sprinkle generously with salt, pepper and thyme.
Cover with foil and bake for 30 minutes.
Remove foil, top with cheese and bake another 30-35 minutes until cheese is golden brown and the veggies are tender.

Personal Notes:
Tomatoes need to be a bit thicker than the other veggies to keep from getting soggy. Mushrooms are a nice addition to this medley.
