3 1/4 c lukewarm milk
1 TBS yeast
1 to 1 1/2 TBS kosher salt
3 TBS sugar
1/4 c neutral flavored oil
7 c unbleached all purpose flour

Directions:
Mix everything but the flour together in a vary large bowl. Mix in flour without kneading, using a spoon or kitchenaid mixer with a paddle.
Cover, not airtight and allow it to rest at room temperature until the dough rises and collapses (or flattens on top), approx 2 hours.
The dough can be used immediately after its initial rise, though it's easier to handle when cold. Refrigerate it in a lidded (not airtight) container for up to 7 days. It can be stored for 3 weeks in the freezer in 1/2 # portions. When using from frozen, thaw it in the fridge overnight.
On pizza day, stretch or roll out dough and place on preheated baking stone for about 8 minutes. 450º
