For Marinade
2 pounds chicken tenderloins
1 c buttermilk
1 1/2 tsp salt
1/4 tsp cayenne
1/4 tsp garlic powder
1/4 tsp paprika

For the breading

1 1/2 c ap flour
1 heaping tsp salt
1 tsp pepper
1 tsp garlic powder
1 tsp paprika
1 1/2 tsp baking powder
3 TBS buttermilk

3 to 4 cups oil for cooking

Directions:

Combine the chicken tenders with all of the marinade ingredients in a large ziploc bag. Seal tightly and smush it around until tenders are evenly coated. Refrigerate overnight or at least 4 hours.
Make breading by whisking together dry ingredients. Then add buttermilk and stir with a fork until evenly clumpy.
Line a baking sheet with foil. Remove the tenders from the marinade a few at a time and toss into the flour mixture. Be sure to press the chicken firmly into the breading so clumps adhere to the meat.
