1 lb cooked spaghetti (we use Dreamfield's low carb pasta)
1 lb cooked chicken breasts (2 breasts), sliced
1 container of bottled Bangkok Padang Peanut Sauce (House of Tsang)
1/2 cup carrots, diced
1 red pepper, diced
1 tbsp olive oil
1/2 cup cucumber, shredded
1/2 cup dry roasted peanuts, chopped
red pepper flakes (optional)

1. Heat a large skillet over medium high heat and cook your carrots and red pepper in olive oil until tender.
2. Using tongs, add your cooked pasta to the pan. Add enough peanut sauce to coat the noodles well. Toss in your chicken. Mix all ingredients well to coat with sauce.
3. Serve warm and top noodle dish with red pepper flakes, shredded cucumber, and peanuts. Makes 4 servings.

Originally, I created this dish a little differently. It was called Asian Sesame Noodles, and I cooked it way back in the day for my police academy. As my police academy was large, I had to come up with something inexpensive, but still tasty. When I met Leigh, she wanted to experiment with my recipe (how dare she), and so we reinvented the dish, still keeping to the fundamental ingredient of what made this dish great- the Bangkok Padang Peanut sauce (available at most grocery stores). This dish is great served cold and makes for a quick and easy lunch at work. Now about this Dreamfield's low carb pasta (available at most grocery stores)... you have to try it. It has the taste and texture of traditional pasta, but with more fiber and protein, and less carbohydrates. We use Dreamfield's pasta in all of our favorite pasta dishes. We don't experience food coma after eating this pasta. It's great! You'll be a believer, I promise.
