Ingredients: ........................Small Loaf......Large Loaf Flour.................2 cups............3 cups Salt...................¾ tsp..............1 ⅛ tsp Yeast................½ tsp..............⅞ tsp Water................1 cup..............1 ½ cups

Directions: |
Directions:Spread olive oil in medium sized bowl and set aside.
Using hands, mix all ingredients in a large bowl resulting in a round gooey mixture. Flour hands and place dough-ball in oiled bowl. Cover w/ plastic wrap and refrigerate 4-12 hours.
Remove from refrigerator and allow to sit at room temp for 2 hours.
Preheat oven to 475º. Flour counter and hands. Pour dough onto counter. Stretch and fold dough - letter style and let sit 10 minutes w/ cloth covering. Repeat fold and set process 3 more times.
Carefully remove dutch oven and drop dough in. Reduce heat to 450º and bake for 25 minutes covered. Remove cover and bake for 15 minutes.
Put on rack and cool for 30 minutes minimum. Best if wrapped in paper or put in paper bag. Can be frozen. |
