2-12 oz. packages of dry black beans
5-6 onions
2-3 green peppers
½ head garlic - chopped
2 Bay leaves
1/4 t Crushed red pepper
4 oz. olive oil
1/4t cumin-optional
2t oregano

Directions:
Directions:
Pick over dry beans to remove any stones. RInse well. Soak beans in water overnight with water 1" above beans, covered.

Chop onions, green pepper and garlic. Add to beans (leaving the water they were soaked in). Add other ingredients and ring to a boil. After beans have boiled for about 5 minutes, lower the heat and cook for 1-1/2 to 2 hours on med-low. Stir occasionally. Mash some of the beans to thicken the soup. Add salt after cooking. Serve with hot cooked rice or serve with EVOO and chopped onion.
