1 cup shortening (part butter or margarine)
1 1/2 cups sugar
2 eggs
2-3/4 cups flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1/4 teaspoon salt
2 tablespoons sugar
2 teaspoons cinnamon

Directions:
Directions:
Heat oven to 400 degrees. Mix shortening, 1-1/2 cups sugar, and eggs thoroughly.
Blend flour, cream of tartar, baking soda, and salt; stir in. (see note below)
Shape dough in 1" balls. Roll in mixture of 2 tbsp. sugar and the cinnamon.
Place 2 inches apart on ungreased baking sheet. Bake 8 to 10 minutes.
These cookies puff up at first, then flatten out.

If you use self-rising flour--omit cream of tartar, baking soda, and salt
