1/2 cup milk
1/2 cup water
1/2 cup butter
1/4 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon nutmeg
1 cup sifted flour
4 eggs
1 cup shredded cheddar cheese

Directions:
Directions:
Preheat oven to 400º. Grease 2 large cookie sheets. Combine first 6 ingredients in large saucepan. Bring to full rolling boil. Add flour all at once, stirring vigorously with wooden spoon until mixture forms a smooth ball that leaves sides of pan clean.
Add eggs 1 at a time beating well until smooth and shiny. Stir in cheese until melted.
Drop by rounded teaspoonfuls on cookie sheets 1 inch apart. Bake at 400º for 10 minutes, then 350º for 10-15 minutes until puffed and golden. Turn off oven. Prick in several places with fork. Let stand in oven 5 minutes Serve warm.

If made a day ahead, refrigerate in airtight container. Reheat in preheated 350 degree oven for 5 minutes.
