Poultine with Guinness Gravy Recipe

GUINNESS GRAVY
2 T. butter
1/4 c. finely minced onion
2 tsp. strong Dijon mustard
2 tsp. cornstarch
1 c. chickenstock [can substitute vegetable broth]
1 c. Guinness Draught
salt and pepper to taste
TO SERVE
3-4 c. baked or fried french fries
1/2 c. cold white cheese curds

Directions:
1. Make the gravy...In a large sauce pan, melt the butter over medium heat and add the onions and cook for 5 minutes or until translucent
2. Stir in the mustard
3. Mix 1/4 c. of the stock with the cornstarch and set aside
4. Slowly stir in the remaining stock and the Guinness into the onions
5. Stir in the cornstarch mix and continue to cook, stirring frequently, until the gravy comes to a boil
6. Reduce heat slightly and simmer until it just starts to thicken [poutine gravy should be on the thinner side, but you can always make a thicker gravy with a bit more cornstarch or cooking longer
7. Season to taste
8. Place hot fries on plate and top with cheese curds and pour gravy over the top
9. Serve immediately
