Ingredients:  
1 green bell pepper, diced into 1" squares
1 red bell pepper, diced into 1" squares
1 yellow bell pepper, diced into 1" squares
1 lg. (or 2 small) red onion, diced into 1" squares
1 sweet potato, quartered & sliced into ~1/4" slices
1/4 c. olive oil
2 tsp. dried parsley
2 tsp. seasoned salt
2 tsp. garlic salt

Directions:
Directions:
1. Preheat oven to 350°F. Prepare vegetables and place in large bowl.
2. Pour olive oil over vegetables and sprinkle with parsley, seasoned salt and garlic salt. Mix well.
3. Spread on cookie sheet. Bake for 20 minutes or until tender crisp.
