2/3 c. milk
1 tsp. vegetable oil
1 egg
2 c. baking mix
2 T. sugar
Any flavor fruit preserves

Glaze
2/3 c. powdered sugar
3-4 tsp. water

Directions:
Directions:
Preheat oven to 400º

Grease bottom only of 12 medium muffin cups.

Combine milk, oil and egg until blended, then add baking mix and sugar until just blended. Don't overmix!

Pour into muffin tins. Drop 1 tsp. of your choice of fruit preserves onto the center of batter in each cup.

Bake 13-18 minutes or until golden brown. Cool slightly and remove from pan.

Mix glaze and drizzle over warm muffins.
