1 1/4 c graham cracker crumbs
1/2 c butter/margarine (melted)
1/2 c packed brown sugar
1/3 c all-purpose flour
2 c medium-grind coconut
10 oz sweetened condensed milk

Icing:
2 c icing sugar
4 tbsp butter/margarine
3 tbsp maraschino cherry juice

Bottom Layer:Combine first 4 ingredients. Press into 9"X9" pan with parchment *paper sling. Bake at 350º for 10 minutes
Second Layer: In clean bowl, combine coconut with condensed milk. Spread over bottom layer. Bake at 350º for 20 minutes, or until edges are slightly light brown. Allow to cool before frosting.
Icing:Beat ingredients together, adding in more juice if needed to make icing soft enough to spread. Spread over cooled bars. Cover tightly and store for at least a day to soften. Can use water with red food colouring (1/4 tsp.) with almond or cherry flavouring instead of cherry juice.

*A piece of parchment paper that is tight on two sides, and hangs over on the other two. Once squares are cooked, cut along the two tight sides, and pull the squares out with the parchment paper.
