2 packages dry yeast
1/4 c. warm water
1/2 c. mashed potatoes, cooled
1/2 c. water in which potatoes were cooked
1 1/2 c. scalded milk, cooled
1 tbsp. salt
2 tbsp. sugar
2 tbsp. melted shortening or butter
5 c. flour

Directions:
Directions:
Soften yeast in water.

Combine potatoes, milk, salt, sugar, melted shortening and potato water. Add softened yeast, then stir in flour. Mix thoroughly, using only enough of the flour to make stiff, kneadable dough. Knead until smooth and elastic.

Place dough in lightly greased blow. Cover and let rise until doubled in bulk. Punch down and let rise again for 1 hour.

Shape into 2 loaves. Place in 2 greased bread pans. Let rise again until doubled in size. When getting close, preheat oven to 400º.

Bake 50-60 minutes. Turn bread out on racks to cool.

Grandma notes you might need as many as 6 cups of flour to make the dough the way you want it. She also recommended using a mixture of bread flour and gluten flour.
