1 spaghetti squash, seeded
3 tsp. olive oil
3/4 c. chopped onion
Salt and pepper
3 cloves garlic, minced
1/2 c. light sour cream
3 oz. cream cheese
3/4 c. grated Parmesan cheese, divided
3 c. packed baby spinach
1 1/4 c. canned artichoke hearts, chopped
3/4 c. mozzarella cheese

Directions:
In a microwave safe dish, put spaghetti squash in microwave cut side up. Pour 1/2 inch water in dish and microwave until done. Scrape strings from squash with fork taking care not to damage shell of squash.
In a an on stove top, heat olive oil. Cook onion until tender. Salt and pepper to taste. Add garlic and cook until smells good! Add sour cream, cream cheese, and half the Parmesan cheese. Stir until everything is melted and smooth. Stir in spinach and artichoke hearts. Cook until spinach wilts. Combine spaghetti squash with the spinach and cheese mixture and stir until well mixed. Spoon mixture in each of the squash shells. Top with mozzarella and remaining Parmesan cheese. Put under broiler in oven until cheese is melted and golden brown.
Serve with chips.
