1 4 or 5 lb roast (beef, venison, pork) Can even be frozen
1 Qt whole tomatoes
1 onion sliced
1 stalk celery chopped
2 T Italian seasoning
salt and pepper
1 cup water if tomatoes don't seem juicy

Directions:
Directions:
Put roast in covered roaster and place all other ingredients over the roast.
Cover, put in a 300º oven while you go to church, visit the family, weed the garden or whatever. In about 4 or 5 hours open the roaster and squish all of the veg together and if the roast is falling apart its done and you are ready to serve. If it's not done, re-cover and keep roasting. Use the juices and veg as sauce for spaghetti, pasta or rice. This can also be done in a crock pot in about the same time and in a smaller version in a pressure cooker for quick cooking.
