12 lamb shanks, seasoned with salt and pepper
2 oz olive oil
4 onions, chopped
6 carrots, chopped
20 garlic cloves
1 bottle red wine
48 oz tomato concasse, or pureed tomato
40 oz beef stock
10 tsp fresh rosemary
4 tsp fresh thyme

Directions:
Preheat oven to 350 degrees. Heat oil in large dutch oven and sear all shanks on all sides in batches. Set aside. Add onion, carrots and garlic to dutch oven, cook for 4 minutes, scraping all brown bits off the bottom. Add Tomatos, and cook 5 minutes. Add red wine, stock and herbs. Bring to a boil. Place shanks back into liquid, make sure theyre covered with the sauce. Cover and bake for 2.5-3 hours. Remove shanks and cover with foil. Strain sauce and simmer until reduced by half. Serve shanks with the sauce.
