Ingredients: 12 slices of bacon (per jelly roll pan- you can use thick- or thin- cut bacon)

Directions:1. Preheat oven to 400 F. Line rimmed baking sheet (jelly-roll pan works great) with aluminum foil.
2. Lay strips of bacon on top of the foil. Cook for 5-6 minutes (until fat starts to render), and then rotate the pan in the oven.
3. Continue cooking bacon. For thick-cut bacon: cook for about 8-10 more minutes. For thin-cut bacon: cook for about 5-6 more minutes.
4. Transfer the bacon to a paper towel-lined plate and drain/pat off the extra grease.
You can cook more than one batch of bacon on the same pan; drain off most of the grease into a can and put the next batch of bacon on the pan. Since the pan will already be hot it may shorten your cooking time by a minute or so.
To clean up the grease, drain the grease into your grease can. Let the pan and remaining grease cool completely. When cool, ball up the foil, keeping the grease contained within it, and throw it away. Your pan underneath shouldn't be too greasy and can be washed easily. |

Notes: I hate cooking bacon in a pan on the stove. I can't fit very many in a pan at once, I can't ever tell when to take them out, and usually end up making them way too crispy. So, I do it this way. You can cook a giant batch at once and cook the bacon to chewy (or crispy) perfection!
