7 large eggs
1 cup sugar
1 cup oil
2 tsp. lemon extract
2 drops lemon oil
2 drops anise oil
4 1/2 cups flour
2 heaping tbsp. baking powder
1/2 tsp. salt

Frosting:
2 cups powdered sugar
2 to 3 tbsp. water or cream
anise or lemon extract to taste
pinch of salt

Directions:
Directions:
In a large bowl, beat eggs until fluffy. Add sugar and beat until smooth. Add in oil and extracts; beat well. Add in the rest of the dry ingredients; mix well. The dough should be soft and sticky, so don't add too much extra flour. On a floured surface, pinch off a piece of dough and make snake like ropes, and twist them into shapes, like figure eights or "S." Place on parchment-lined cookie sheets and bake in a preheated 400º oven for 10 minutes. Cool. Frosting: Mix all ingredients together and beat until smooth. You can add more liquid if the consistency is too thick. Dip the cooled cookies into the frosting and place on a piece of waxed paper or wire rack to dry.

This is a very old recipe given to mom so many years ago that no one can remember who shared it. The dough can be tricky to handle, but the result is deliscioso!
