6 slightly under ripe Bartlett (Williams) pears,
halved lengthwise, cored and peeled
strip of dried orange peel
piece of cinnamon stick
1/2 C (4 oz 125 g) sugar
3 C (24 fl oz/750 ml) red wine

Directions:
Directions:
Arrange the pear halves in a large enameled ironware or stainless-steel pan. Tuck in the orange peel and cinnamon stick and sprinkle the sugar over the top. Pour in wine to cover and bring to a boil. Reduce the heat, cover and simmer for 1 hr.
Using a perforated skimming spoon, remove the pear halves to a serving dish. Discard the orange peel and cinnamon. Boil the liquid gently until reduced by two thirds and syrupy, about 20 minuets. Pour the syrup over the pears.
Leave to cool, cover tightly with plastic wrap and chill before serving.

Peeled yellow peaches are also very good prepared this way, and a stunning sight if left whole and unpitted. Count half the cooking time.
