Ingredients: Crust: 1 cup flour 1/2 cup sugar 1/2 cup butter
Filling: 8 oz. cream cheese, softened 2 tbsp. sugar 2 tbsp. milk 1 tsp. vanilla extract 1 egg 8 oz. can crushed pineapple, well drained 1 cup flaked coconut 1/2 cup macadamia nuts, chopped 1 tbsp. butter, melted
Glaze: 1/2 cup powdered sugar 3 to 4 tsp. milk 1/4 tsp. rum or vanilla extract

Directions:Crust: Mix the flour and sugar in a bowl. With a pastry blender or fork, cut in the butter until crumbly. Press into the bottom of an ungreased 9-inch square pan. Bake in a preheated 350º oven for 10 minutes. Remove from oven and prepare the filling. Filling: In a mixing bowl, beat cream cheese, sugar, milk, vanilla and egg. Stir in the pineapple. Spread over the partially baked crust. In a small bowl, combine coconut, nuts and melted butter. Sprinkle over the pineapple mixture and return it to the oven; bake for another 18 to 20 minutes or until coconut is golden brown and filling appears set. Cool completely. Glaze: In a small bowl, combine all the glaze ingredients. Drizzle over the cooled bars. Refrigerate until serving time. When ready, cut into bars. |

Notes: Mom loved this recipe, but was disappointed when she realized they had to be kept refrigerated and couldn't be added to her "Christmas Cookie Repertoire." She still made them occasionally, just because she loved the combination of pineapple, cream cheese, coconut and macadamia nuts.
