4 oz Ghirardelli white chocolate chips
4 lg egg yolks, room temperature
1/3 c sugar plus additional for carmelizing
2 c whipping cream
1/2 t vanilla extract

Directions:
Directions:
Preheat oven to 300º F.
In a medium bowl, whisk egg yolks with sugar until smooth.
In a 2 qt saucepan, bring whipping cream to a simmer over med-high heat.
Add white chocolate to simmering whipped cream.
Turn off heat & wihisk until white chocolate has melted.
Slowly add white chocolate mixture to egg yolk mixture, whisking continuously to keep the eggs from scrambling. Whisk until smooth.
Add vanilla.
Pour into 4 ramekins or custard cups.
Place cups in a 13" X 9" baking or broiler pan.
Add enough water so the cups sit in about 1" to 1 1/2 " of water.
Bake until set, about 45 minutes.
Remove from the oven & sprinkle generously with sugar ( the more sugar you have, the more crunch you get).
Broil for another 4 to 5 minutes or until the desired level of brownness or you can carmalize them with a baker's torch.
