Ingredients: 2 slices hearty whole-wheat bread, cubed (2 cups) 2 eggs 1 large onion, finely chopped 1/2 cup milk 1/2 cup grated Parmesan cheese 3 tbsp. fresh parsley, finely chopped 1 tbsp. Dijon mustard 2 tsp. Worcestershire sauce 1/2 tsp. salt 1/4 tsp. pepper 1 1/2 lbs. ground beef 1/2 cup ketchup (or more, if needed to cover well)

Directions:Toast the bread, remove crusts and cube it; set aside. Break the eggs into a large mixing bowl; slightly beat. Add onion, milk, Parmesan cheese, parsley, mustard, Worcestershire sauce, salt, pepper and reserved bread cubes; mix well. Crumble ground beef over the mixture and then fold together using your hands. (Wash your hands well before and after handling the meat.) Transfer the meat into a glass 9x13-inch baking dish, patting the mixture down to about 3 inches high. Pour ketchup over the entire meatloaf (use more if necessary to cover the whole thing). Bake in a preheated 325 º oven for 1 hour and 15 minutes or until done to personal preference. |

Notes: I found this recipe in the newspaper years ago. It was named "Mom's Amazing Meatloaf." I have passed it on to everyone I know over the years. Not only is it so yummy, it turns out perfect every time. You don't have to worry about whether it is salted enough, the proportions are perfect. They say leftovers make fantastic sandwiches, but I have never had any leftover to try!
