2 original flavor rotissierie chickens, deboned and torn into chunks (or you can use 6 cooked chicken breasts, cubed)
2 cans of cream of mushroom soup
2 cans of cream of chicken soup
2 cans of Rotel, mostly drained (however spicy you prefer)
16 oz of shredded cheese (I prefer Mexican style)
12 tortillas (The fresher the better! You can use flour or corn, or even tortilla chips)
Sliced jalapeños (optional)

Directions:
1. Preheat oven to 350º. Apply cooking spray to the bottom of a 13x9" glass pan.
2. Mix the cream of mushroom soup, cream of chicken soup, and Rotel in a saucepan. Warm on medium-low heat.
3. Tear tortillas into large chunks and completely cover the bottom of the dish.
4. Spread several large spoonfuls of soup mixture to cover the layer of tortillas.
5. Spread half of the chicken over the soup layer.
6. Spread half of the cheese over the chicken layer.
7. Repeat steps 3-6, making a second tortilla-soup-chicken-cheese layer.
8. Top with sliced jalapeños if desired.
9. Bake for 40-45 minutes, until cheese is lightly browned and bubbly.
