1 lb. good quality semi-sweet chocolate
1/2 cup butter
1 1/2 cups whipping cream
1 oz. Grand Marnier or other liqueur
cocoa powder

Directions:
Chop the chocolate into small chunks and melt slowly in a double boiler, along with the butter. In another pot, bring whipping cream to a boil, remove from heat; set aside.
When chocolate is melted, slowly add whipping cream and beat together until the consistency is smooth. Beat in the Grand Marnier until smooth. Cover with plastic wrap and refrigerate overnight or until the mixture is firm. The next day, take a small melon baller and scoop out balls of the hardened mixture. Work as fast as possible. Roll them in cocoa powder. They can be dipped into tempered chocolate, if preferred. Keep refrigerated or frozen until ready to serve. Let them warm for no more than an hour before serving.

One year I was really into making chocolate truffles for Christmas gifts. I tried almost every recipe I could find in order to compare which one I liked the best. This truffle recipe was from the French restaurant Le Francais and it was my favorite. An almost identical truffle recipe I found from the Ritz Carlton came in 2nd. They are not hard to make and really elegant to give as a gift!
