1 cup butter, softened
1 cup powdered sugar
1 cup sugar
5 cups flour
1 cup vegetable oil
2 eggs, beaten
2 tsp. vanilla extract
1 tsp. baking soda
1 tsp. cream of tartar
1/4 tsp. salt
Directions:
Directions:
In a mixing bowl, cream together butter and sugars. In another bowl, combine flour with remaining ingredients; beat into butter/sugar mixture. Roll into 1-inch balls or whatever size you desire. Press down with the bottom of a glass which has been dipped in granulated sugar. Bake on a parchment-lined cookie sheet in a preheated 350º oven for 10 to 12 minutes.

I worked next to an accountant whose wife use to send him in with cookies once a month...so of course, we became the best of friends! These were one of my favorites; simple, but incredibly delicious. On different occasions, she would use different colored sugars to flatten out the cookies.
