4 bacon slices, chopped
1 medium onion, diced
3 garlic cloves, chopped
3 qts. chicken broth
1 head of cauliflower, cut into small florets
14.5 oz. can diced tomatoes
2 oz. tomato paste
1/2 tsp. oregano

8 oz. orzo pasta, cooked
1/2 cup fresh basil leaves, chopped (optional)
salt and pepper to taste
1/2 cup grated Parmesan cheese

In a large saucepan, sauté the bacon for 10 minutes. Add onion and garlic; sauté until transparent. Add chicken broth and bring to a boil. Add cauliflower, tomatoes, tomato paste and oregano. Reduce heat and cook until cauliflower is tender. Add cooked pasta, fresh basil and Parmesan cheese. Let cook for another 2 to 3 minutes. Season with salt and pepper. Sprinkle Parmesan cheese on top.

I found this recipe in the newspaper 25 years ago from a local Italian restaurant, Slicker Sams. It is delicious, simple to make and tastes even better the next day. If you want a lighter soup, don't even bother adding the pasta, you won't even miss it!
