1 lb groung beef
2 eggs
salt and pepper
1/2 c. parmesan cheese
1 - 2 tbs. basil, parsley
1 loaf hard italian or french bread (leave out over night)

Directions:
Directions:
Mix ground beef; two eggs; salt; pepper; parmesan cheese; basil; parsley to taste. Add hard (stale) bread (Italian and/or French work best) soaked in water and squeezed dry, to mixture and remix. Form balls. Meatballs may be fried and placed in sauce to continue cooking or baked and added to sauce (use recipe above) if desired. This makes approximately 14 meatballs.
