2 Tbsp Hoisin sauce
2 Tbsp Oyster Sauce
2 tsp Toasted sesame oil
1 Tbs Hot Chinese chili paste
3 Tbsp Vegetable oil
Boneless, skinless chicken breast, cut into 1" cubes
1/2 Small yellow onion, in 1" dice
2 Celery ribs, 1/2" dice
1/2 C Unsalted roasted cashews
1 Tbsp Minced garlic
1 Scallion, sliced thinly for garnish

Directions:
Directions:
In a bowl, stir together the hoisin, oyster sauce, sesame oil and chili paste. Heat a wok (deep saute pan) over medium heat. Add 2 Tbsp vegetable oil and the chicken. Leave chicken for a minute or two to sear. Then stir fry for another minute or two until lightly browned. Set aside.

Add 1 Tbsp vegetable oil to pan, then celery, onions, cashews and garlic. Cook about 2 minutes until crisp but tender. Add sauce mixture and chicken to pan. Stir-fry about 3-4 minutes longer, until chicken is cooked through and the sauce is thickened. Serve with rice and garnish with scallions.
*I doubled the sauce recipe and then added 2 bags of (cooked in microwave) frozen veggies. (broccoli/carrots/sugar snap peas/water chestnuts)
