2 tsp Oil
1 C Chopped onion
1/2 C Chopped green pepper
1/4 C Celery
14 oz (4) Lean skinless chicken thigh on the bone
12 oz (4) Lean skinless chicken drumsticks
Salt & Pepper to taste
1 Tbsp All purpose flour
2 C Low fat chicken broth
2 (6oz) Links of andouille sausage (I use light/regular keilbasa)
2 Bay Leaves
Cajun Seasoning to taste (Tony Chachere)
Cayenne Pepper to taste
1/4 C Chopped scallion for garnish

Directions:
Heat a large deep non-stick skillet over medium heat. When hot, add the oil, onions, peppers and celery. Cook 3-4 minutes, stirring.

Push the vegetables to the edges of the skillet and add the chicken, season with salt and pepper. Brown 2-3 minutes on each side, then sprinkle the flour over the chicken and vegetables.

Add the broth, sausage and bay leaves. Add cajun seasoning and cayenne. Cover and let simmer for 30-35 minutes (if using boneless/skinless thighs, 20-25 minutes). Before serving, remove the bay leaves. Adjust the cajun seasoning and sprinkle with scallions for garnish. Serve over rice or mashed potatoes.
