3 quarts chicken stock
3 pounds celery, coarsely chopped
1/2 pound carrots, chopped
1/2 pound onions, chopped
1 head garlic, cleaned and chopped
1 cup all-purpose flour
1 tablespoon salt
1 teaspoon ground white pepper
3 quarts milk
1 cup butter

Directions:
Directions:
In a 12qt pot, medium heat. Melt butter, saute celery, onion, garlic, carrots until translucent.
Add flour and mix thoroughly. Cook a couple of minutes while stirring until flour had a nutty aroma. Add chicken stock and milk. Bring to a boil, turn to low and simmer about 45 minutes. Stirring on occasion. Puree in batches in blender or immersion blender if desired.
