Mexican Rice Recipe

2 T. butter or olive oil or canola oil
1 c. uncooked rice
1 c. chopped tomatoes
1 small onion, minced
1/2 c. green pepper, chopped
2 tsp. salt
2 tsp. chili powder
2 c. water

Directions:
Directions:
Brown raw rice in hot fat, then add tomatoes, onion, green pepper, salt and chili powder. Mix well.

Add just enough water to cover. Cover with lid; allow to simmer until rice is tender (about 30 minutes).

Remove lid to allow mixture to dry out. DO NOT STIR after cooking starts.
