6.5 cups flour (2lbs)
1.5 T yeast
1.5 T salt
3 cups warm (not hot) water (1.5 lbs)

Prepare the dough:
1. Mix all ingredients together in a large bowl/container just until combined.
2. Cover loosely and let rise on counter 2-5 hours (until double)
3. Next, you can make bread right away or store the dough in the refrigerator (loosely covered) until you're ready to use the dough. It can be stored for up to two weeks.

Bake:
1. Preheat oven to 425 degrees with a broiler pan on the bottom rack
2. Shape the dough and let rest 20 minutes (30 minutes if using refrigerated dough)
3. Lightly dust dough with flour then cut slashes to allow for better, even rise in the oven.
4. Put bread in oven and pour 1 cup of hot water into the hot broiler pan.
5. Bake for about 30 minutes. The crust should be a deep golden brown and should almost crackle when you remove it from the oven. Let cool on a cooling rack.
