2 gallons water
2 cups salt
2 cups sugar
2 cups brown sugar
1 cup black pepper corns
2 whole garlic cloves cut in half
sage
thyme
rosemary
1 gallon apple cider not juice
1 bag ice and 5 frozen Gatorade bottles of water
2 sticks unsalted butter
1/2 cup dry rub that you like

Directions:

Add water, salt, all sugars, pepper corns, garlic, sage, thyme, and rosemary together and bring to a boil, simmer for 1/2 hour, stirring so sugar wont burn, cool down and put in refrigerator over night.

Put all the ingredients (plus) 5 apples and 5 oranges, all cut in half, apple cider and Gatorade bottles with lids in cooler. Stir. Poke small holes in the turkey. Add turkey breast down and let brine for 36 hours.

The day of cooking mix the sticks of butter and dry rub making a paste. warm this slightly, and rub all over turkey just before it goes into the BBQ.

Put turkey in 400' degree BBQ for 20 minutes or until turkey turned golden brown on the outside, legs my turn darker brown but wont eat them anyway, after it turns brown turn down to 250' and cook until internal temperature reaches 165' degrees in the thigh area. Cover loosely with aluminum foil and let turkey set for 1/2 - 3/4 hour before cutting up.
