1 medium cucumber, seeded, peeled, and chopped
1 medium ripe avocado, chopped
6 green onions, chopped (about 1 cup)
1/4 cup Italian parsley, chopped
1 T. tarragon leaves, plus 1 T. minced for garnish
1 T. chives, chopped (Optional)
1 cup chicken stock
1 cup sour cream
3 T. fresh lemon juice
1 t. salt
Pinch cayenne (or Tony's)
1 pound jumbo lump crab meat

Directions:
Directions:
Place cucumber, avocado, green onions, parsley, tarragon leaves and chives, (if using), into a food processor. Process for 10 seconds. Add chicken stock, sour cream, lemon juice, salt, and cayenne. Process for another 10 seconds until mixture is smooth and well blended. Pour soup into a large bowl, cover with plastic wrap and chill for at least 2 hours. When ready to serve, ladle into bowls and garnish with a couple of lumps of crab meat. Sprinkle with the minced tarragon and chives.
