1/4 cup butter
3/4 cup white sugar
1/2 of a orange zest
1 tsp vanilla extract
2 eggs
1 egg white
3 cups all purpose flour
1 1/2 tsp baking powder
1/4 tsp salt
1/2 bag of 12 oz white chocolate chips, chopped
1/2 bag of 12 oz white chocolate chips for dipping
1/2 bag of 12 oz dried cranraisins, finely chopped (save small amount for garnish)
1/2 can of 10 oz , pistachios finely chopped (save small amount for garnish)

In a large bowl, cream together the butter, sugar, orange zest, and vanilla with an electric mixer until light and fluffy. Mix in the eggs and egg white one at a time, beating well after each addition. Sift together flour, baking powder, and salt; gradually blend into the creamed mixture. Using a wooden spoon stir in 1/2 the white chocolate, dried cranraisins , and pistachios.

Preheat oven. Line a baking sheet with parchment paper.

turn dough out on lightly floured surface, divide into halves. Form each into a flattish log about 12 inches long by 3 inches wide on the baking sheet.

Bake 15 minutes, or golden brown. Allow logs to cool on baking sheet until cool enough to handle. On a cutting board, cut logs crosswise on a diagonal into 1 inch thick slices. arrange on baking sheet.

Bake for another 6 minutes, and turn over for another 6 minutes. Transfer to a wire cooling rack, and cool completely. Melt white chocolate and spread on one side of biscotti. sprinkle with very finely chopped cranraisins and very finely chopped pistachios. Store in an airtight container.
