1 C. lentils
2 TB. oil
1 onion diced
1 clove garlic minced
1 TB chili powder
2 tsp. cumin
1 tsp. oregano
2 1/2 C. chicken broth
1 C. Salsa
taco shells and toppings

Directions:
Directions:
Rinse lentils and drain. In large skillet, saute the onion and garlic together. add the lentils and spices, cook for a minute. Add the broth and bring to a boil. Reduce heat and simmer for about 30 minutes, longer if lentils have a crunch. Uncover and cook a few more minutes to thicken. Add salsa. Serve on taco shells with toppings of choice

We love this recipe. Super cheap and good replacement for ground beef! The kids didn't even turn their nose up at it. They loved the flavor too!
