Kansas Barbecue Ribs Recipe

For the ribs...
3 lbs. meaty spareribs cut into serving sized pieces
1 or 2 lemons, sliced
1 med. white onion, chopped
1 batch of the homemade barbecue sauce, below

For barbecue sauce...
2 T. brown sugar
1 T. paprika
1 tsp. salt
1 tsp. dry mustard
1/4 tsp. chili powder
1/8 tsp. cayenne pepper
2 T. Worcestershire sauce
1/4 c. white vinegar
1 c. tomato juice
1/4 c. catsup
1/2 c. water

Directions:
Directions:
Place the ribs on a rack in a shallow baking dish
Do not cover
Do not add water
On each piece, place one lemon slice
Sprinkle on the chopped onion
Bake in a 450 degree oven for about 30 minutes

Mix together the brown sugar and spices in a small dish
Mix the liquid ingredients together in a medium sauce pan
Stir the dry ingredients into the liquid ones
Simmer together for 15 minutes to thicken slightly

Pour the sauce over the ribs
Reduce heat to 350 degrees
Continue baking 1 1/2 to 2 hours, basting every 15 minutes
Cover with foil during the last half hour of bakng
