1 med. onion
2 tsp. oil
1 can Ro-Tel tomatoes with jalapenos
1 lb. hot turkey sausage
1 (10 oz.) pkg. frozen spinach, thawed
1 (16 oz.) pkg. grated Monterey Jack cheese
1 (8 oz.) pkg. cream cheese
1 (8 oz.) ctn. sour cream
1 c. half and half
Garlic, hot pepper, salt and pepper to taste

Directions:
Directions:
Saute onion in oil until soft, about 4 minutes. Add tomatoes and cook 2 minutes. Brown sausage in a separate pan, drain. Transfer the sausage and tomatoes to a large bowl and add remaining ingredients. Mix well. Spoon into a shallow baking dish. Bake at 350º for 35-40 minutes, or until top is brown and bubbly. Note: May use low fat or fat free cream cheese and sour cream.
