Chorizo Sausage Gravy
1/4 pound of chorizo sausage
1/4 pound of soyrizo (yes! soyrizo)
1/2 small onion, chopped
3 tbsp olive oil
1/4 cup all purpose flour
2-3 cups of milk
Freshly ground pepper
Salt to taste
1/4 cup cilantro, chopped

Frozen Biscuits - Cooked according to package instructions

Brown the sausage in a pan, breaking up and crumbling. Follow this tip to make the job much easier! Add chopped onions. After 5 min, add the soyrizo.

Once the meat is fully browned, scoop it out with a slotted spoon, reserving any drippings. Now you are going to make a blond roux. Add the olive oil to the skillet and bring the pan up to medium heat. Slowly whisk in the flour, stirring constantly until smooth, cooking at least 5 minutes in order to cook the flour.

Slowly begin whisking in the first twp cups of milk until fully incorporated and mixture begins to bubble. This will provide a fairly thick gravy. Continue whisking in additional milk a little bit at a time, until the gravy reaches the desired consistency.

Grind some pepper directly into the gravy, salt to taste, return the sausage to the pan and stir to mix. Serve over hot, split biscuits and top with chopped cilantro.

You can find soyrizo at the grocery store in the refrigerated section. Trader Joe's makes a good one.
