2 sticks unsalted butter, softened
1/2 cup sugar
4 eggs, beaten
1 tablespoon vanilla
6 overripe bananas, mashed
2 cups whole wheat flour
2 cups all-purpose flour
2 tablespoon ground flaxseed
2 teaspoon baking soda
2 teaspoon salt

Preheat oven to 350º.
Coat loaf pans with cooking spray. Using mixer fitted with whisk attachment, beat the butter and sugar on high speed until light and fluffy, about 2 minutes. Reduce speed to medium and mix in the eggs one at a time, then add vanilla. Fold in the mashed bananas. In a medium bowl, whisk both flours, flaxseed, baking soda and salt. With mixer on low speed, gradually add the flour mixture to the butter mixture, beat until just combined (do not over mix). Divide the batter between the loaf pans. Bake until golden and a toothpick comes out clean, about 1 hour for 9 inch pans. If using 6 inch loaf pans bake 25 to 30 minutes.
