2-1/2 pounds of chicken (I used frozen chicken breasts, mostly thawed but you
can use fully frozen)
1 chicken bouillon cube or 1 teaspoon bouillon granules)
3/4 cup water
1/4 cup olive oil
1/4 cup balsamic vinegar
2 tablespoons lemon juice
1 tablespoon chili powder
1 tablespoon garlic powder)
2 teaspoons dried basil
2 teaspoons dried parsley
1-1/2 teaspoons salt
1-1/2 teaspoon black pepper
1 teaspoon paprika
1 teaspoon cumin
1 teaspoon (more or less to preference) cayenne pepper

Put chicken in slow cooker. Whisk all the other ingredients together and pour over chicken. Cook on low in slow cooker for 8 hours. Shred chicken with a fork.

You can serve this over rice or it makes great burrito! TONS of flavor...we like it very spicy but you can watch the cayenne pepper if you like a more mild flavor.
