4 medium carrots, shredded
1 medium yellow summer squash, shredded
1 medium zucchini, shredded
1 medium sweet red pepper, finely chopped
2 medium tomatoes, seeded and chopped
1 small red onion, finely chopped
1/2 cup ketchup
3 Tbsp. minced fresh basil or 3 tsp. dried basil
3 Tbsp. molasses
2 Tbsp. cider vinegar
2 garlic cloves, minced
1/2 tsp. salt
1/2 tsp. pepper
2 lb. lean ground beef
12 whole wheat hamburger buns, split

Directions:
Directions:
In a 5 or 6 qt. slow cooker, combine the first 13 ingredients. In a large skillet, cook beef over medium heat for 8 to 10 minutes or until no longer pink, breaking into crumbles. Drain; transfer beef to slow cooker. Stir to combine.
Cook, covered, on low for 5 to 6 hours or until heated through and vegetables are tender. Using a slotted spoon, serve beef mixture on buns.
