4 C fresh spinach, torn into bite size pieces
½ C scallions cut crosswise in ¼" pieces
1 clove garlic, crushed
1 C italian bread, preferably stale, cut into ½" cubes
4 T unsalted butter, divided
3 C (approx. ¾ pound) mushrooms cut into 1/8" slices
2 T fresh lemon juice
¼ tsp. salt
Pinch of freshly ground black pepper

Place spinach in large salad bowl. Add sliced scallions, cover with plastic wrap, and refrigerate until ready to serve.

Combine garlic and 2 tablespoons butter in medium size skillet over medium heat. When foaming subsides, remove and discard garlic. Add bread cubes and sauté, stirring occasionally, about 5 minutes, or until crisp and golden. With slotted spoon, transfer croutons to paper towel lined plate, set aside.

Add remaining butter to skillet and melt over medium heat. When foaming subsides, add mushrooms and sauté, stirring occasionally, about 7 minutes or until the liquid they yield has evaporated and mushrooms are beginning to brown at the edges. Remove pan from heat and set aside.

Squeeze enough lemon juice to measure 2 tablespoons. Add lemon juice, salt, and pepper to spinach and scallions and toss to combine.

Add croutons and mushrooms and toss.
