1 lb. bow tie pasta, cooked, drained, chilled
6 oz. kalamata or black olives, quartered (may substitute artichoke hearts)
8 oz. oven roasted red bell peppers, peeled, seeded, and diced.
½ C red onion, finely diced
½ C olive oil
¼ C white wine vinegar
2 tsp. fresh cracked black pepper
2 T parsley, chopped
1 tsp. red pepper flakes
Salt to taste

Directions:
Directions:
Put pasta in a stainless steel bowl. Add olives, red onion, and red bell pepper. Toss gently.

In a separate bowl, combine oil and vinegar. Add black pepper, parsley, pepper flakes, and salt. Whisk vigorously.

Toss dressing gently with pasta mixture. Cover with plastic wrap and refrigerate for at least 2 hours.

Prior to serving, adjust seasoning with salt and pepper if needed.
