16 oz. bow-tie pasta
1½ lbs. (4 C) ripe tomatoes, cored and diced
¼ C extra-virgin olive oil
¼ C coarsely chopped fresh basil leaves
1 small garlic clove, minced
½ tsp. salt or to taste
Grated Parmigianino-Reggiano

Note: Any of the following may also be added to this dish: diced cucumber, fresh raw corn kernels, minced green pepper, minced red onion, and/or finely chopped pitted brine-cured black olives.

Cook pasta in plenty of boiling, salted water, stirring occasionally, until al dente, or firm to the bite, 10-12 minutes.

Meanwhile, combine tomatoes, oil, basil, garlic, and salt in a large bowl. Set aside.

Drain the cooked pasta; add it immediately to the tomato mixture. Toss to blend. Sprinkle to taste with cheese, if using, and serve.

May be served warm or at room temperature.
